Easy kill. He can be holding another weapon + the staff. In the Northwestern section of Burning Woods, there's a large crater with a spaceship-style hut on stilts. This is the giant fort. Inside the giant fort up the ramp are a series of awnings and a small hut. The hut is what you want. There are two static spawns in there and each one has a chance to spawn Carpenter Grundo (5% chance, I think). This may take a few hours, but the giants aren't super hard, so keep at it and he'll show up.
